The return of another one of our favorite natural coffees, this coffee was brought to us by our friends at Tio Conejo, who, in addition to growing their own great coffee, also offer stellar coffees from their neighbors in Colombia.

This year’s Chami is wonderfully sweet and complex, with a notable lactic acidity and silky mouthfeel that remind us of raspberry yogurt. The finish of this coffee is also exceptionally clean, with sweet milk chocolate and hazelnut notes coming forward. We’ve been loving this coffee served as a pour-over, allowing the yogurt-like complexities to shine.

If you are a fan of our other favorite natural coffees, then you should definitely try Chami. Even if you’ve never had a natural processed coffee before, the clean fruit notes and smooth body of this coffee makes it the perfect place to start.

MORE ABOUT THIS COFFEE
We routinely buy coffee from Tio Conejo, a small family run farm in Manizales Colombia. Though they did not grow this coffee, the DID find this coffee and bring it to the States for us. Chami comes to us from other small farms neighboring Tio Conejo in Colombia. Most specialty coffee (and regular coffee) is still grown on small family farms in Colombia and much of the world--but often these small farms lack the ability to process their own coffee (and prepare it for sale/export and roasting). As such, typically they sell their coffee to a centrally located 'washing station'. Invercafe is a washing station in this region of Colombia that is known for quality--its proprietors are known personally by our friends at Tio, and they work hard to process the coffee very carefully, ensuring their farmers get as high of a price as possible for their high end coffees. This is our first time buying a coffee processed by them, but we hope it will not be our last. This is one of the cleaner, more balanced natural coffees we've ever tasted, and we know you will love it as much as we do.

SHIPPING: We ship orders on Tuesdays and Fridays. Order cutoff is 12pm the day PRIOR to the ship day. If you ever feel your coffee is not fresh enough, just let us know and we’ll replace it.

Domestic shipping is free for orders of $50 or more. Otherwise, it is a $7.50 flat rate anywhere in the US. We ship everything via UPS Ground.

NOTES ON GRINDING: If you choose “French Press” grind, expect it to be finer than usual, so you’re guaranteed good extraction. Some ultra fine coffee particles will make it through the screen and create a flavorful, albeit slightly opaque cup. In other words, we choose flavor over aesthetics. If you want to keep your cup looking cleaner, choose a pour over grind.

If you don’t see your preferred grind in the options then simply let us know in the notes section at checkout and we’d be happy to grind it for your favorite brewing method.
