Aponte Village is a Honey process coffee from Colombia with exceptional sweetness, red berry acidity, and a hint of honey-like florals. Like most Honey processed coffees, the sweetness and complexity presented by this coffee does not take away from the cleanliness experienced in the cup. Some people think of Honey processed coffees as “the best of both worlds” between washed and natural processes, and when we taste a coffee like Aponte Village, we tend to agree!

We see this coffee being a medium/light roast, a roast that most coffee lovers will appreciate equally. Looking for more of a “traditional” profile for your brew? Try grinding a bit finer than usual with a 1:15 or 1:16 coffee to water ratio. Want to bring more of the acidity forward with a lighter body? Grinding a bit coarser than usual and lengthening your coffee to water ratio to 1:17 or 1:18 should do the trick!

MORE ABOUT THIS COFFEE

Producers contributing to this project grow coffee above 1700 m.a.s.l and their farms range in size between 0.5-1.5 hectares. In Aponte, producers have mastered the art of Honey processing as they have been producing Honeys for 4 consecutive years now. Growers' production is very small and relative humidity is low. This helps the process as not much space is required, and coffees dry much faster compared to other coffee-producing regions.

The Aponte indigenous reserve is located within Tablon de Gomez, an area now recognized by many roasters around the world. They have their own language, politics, and rules. Only a couple of decades ago they were forced to grow illicit plants by the guerrillas and so it was a very dangerous area, almost impossible to access.

Thankfully, they joined forces and decided to stop economic dependence on drug production and instead replanted traditional vegetables and coffee instead, marketing their own products of indigenous origin.

NOTES ON GRINDING: If you choose “French Press” grind, expect it to be finer than usual, so you’re guaranteed good extraction. Some ultra fine coffee particles will make it through the screen and create a flavorful, albeit slightly opaque cup. In other words, we choose flavor over aesthetics. If you want to keep your cup looking cleaner, choose a pour over grind.
