MORE ABOUT THIS COFFEE
The first coffee plants in Mexico were likely planted around the late 18 century, but didn’t develop as an industry until after the attention shifted from minerals and mining to agriculture. In the late 19 and early 20 centuries, after Mexico gained its independence, began the emergence of smallholder farms and led to the establishment of the national coffee institution called INMECAFE, made to help aid coffee farmers access equipment and technical assistance. Unfortunately, unlike other countries that established a coffee institution, the INMECAFE quickly dissipated in 1989, leaving the infrastructure unstable and leading to a coffee crisis that sent Mexico’s coffee farmers into financial disarray. However, since the beginning ofthe 21 century, an increased focus on Fair Trade and small-farmer organizations have created a new image of Mexican coffee that reflects sustainability, affordability, and some incredible cups of coffee. The pure abundance of delicious Fair Trade coffee that Mexico has to offer is a testament to the influence of indigenous groups that utilize traditional growing philosophies. Cristal is the perfect introduction of the potential of Mexican coffee, as it represents three of Mexico’s regions with incredible coffee growing capabilities—Veracruz, Oaxaca, and Chiapas. As Mexico’s coffee industry continues to grow, we are excited to offer new and exciting cups from its different regions, elevations, and varietals.

SHIPPING: We ship orders on Tuesdays and Fridays. Order cutoff is 12pm the day PRIOR to the ship day. We do our best to ship your coffee within two days of roasting it. If you ever feel your coffee is not fresh enough, just let us know and we’ll replace it.
Domestic shipping is free for orders of $50 or more. Otherwise, it is a $7.50 flat rate anywhere in the US. We ship everything via UPS Ground.
NOTES ON GRINDING: If you choose “French Press” grind, expect it to be finer than usual, so you’re guaranteed good extraction. Some ultra fine coffee particles will make it through the screen and create a flavorful, albeit slightly opaque cup. In other words, we choose flavor over aesthetics. If you want to keep your cup looking cleaner, choose a pour over grind.
