The story of this Las Lajas starts in 2008 when an earthquake cut off the Las Lajas micromill’s access to water, leaving producers Oscar and Francisca Chacon without a way to ‘wash’ their crops. Oscar had heard of producers in Brazil and Ethiopia using natural processing techniques, so he decided to try the same. He took his knowledge and philosophy of coffee roasting and applied it to his natural process and found that by carefully measuring and slowly drying the coffees he was able to make truly stunning natural and honey processed coffees.

Now, seventeen years later, the Las Lajas micromill has continued to produce some of the best natural process coffees, not only in Costa Rica, but in the entire world. This year’s crop reminds us of fresh strawberry, vibrant tart cherries, with an underlying vanilla-like florality and sweetness and yogurt-like mouthfeel. The finish of the coffee is one of our favorite parts, reminding us of a crisp light red wine, slightly pulling at our cheeks with complex red fruit notes like raspberry. Just one sip and you’ll see why Las Lajas is one of our most popular coffees every year.

MORE ABOUT THIS COFFEE
The Las Lajas micromill is nestled in the foothills of the Poas Volcano, located outside the town of Sabanilla in central Costa Rica.

The name Las Lajas comes from the Spanish version of an Arabic word for the indigenous-crafted stone artifacts found on the farm when it was first planted. In total, 38 hectares of land are divided into several parcels, each of which grow various shade tree species and create unique micro-climates. In addition, different lots process coffee differently—some naturally, others either honey or washed. Las Lajas’s farming diversity allows the farm to create several distinct products with different characteristics all within a contained area. There is a rich tradition of coffee farming in the Chacón family: generations have owned and produced coffee on their land for more than 80 years.

SHIPPING: We ship orders Monday - Friday. Order cutoff is 11:59pm to be shipped the NEXT shipping day. If you ever feel your coffee is not fresh enough, just let us know and we’ll replace it.

Domestic shipping is free for orders of $50 or more. Otherwise, it is a $7.50 flat rate anywhere in the US. We ship everything via UPS Ground.

NOTES ON GRINDING: If you choose “French Press” grind, expect it to be finer than usual, so you’re guaranteed good extraction. Some ultra fine coffee particles will make it through the screen and create a flavorful, albeit slightly opaque cup. In other words, we choose flavor over aesthetics. If you want to keep your cup looking cleaner, choose a pour over grind.
